A couple of weeks ago we followed a lemon blueberry crumble recipe<\/a> by CookingClassy.com<\/a> that we had never tried before. We were excited to try a new recipe and we were also eager to review it for our blog, so we quickly got to work. We worked hard to prepare it and we even waited for it to cool, and then just as we cut the first slice, Mattie accidentally dropped a plate onto the edge of the crumble pan! It fell straight onto our crumble and shattered into a million tiny pieces. It was inedible, much to our despair!<\/p>\n\n\n\n

After realizing that there were too many tiny shards of glass in the crumble to eat it, I felt entirely stupid. Not only had I made a huge mess, but I had also let Amelia down. The only thing running through my head was stupid, stupid Mattie. Later, as I thought on my parents’ wise and comforting words, I realized that accidents, mistakes, and disappointments are all part of life, but so is forgiveness and love. Amelia never got mad at me, even though she was disappointed, neither did my mom and dad as they cleaned up the glass. We all make mistakes. I will make many more, and many much more serious mistakes than a ruined dessert, but the important thing is to recognize the mistakes, and learn from them, and to not be afraid of them.<\/p> <\/cite><\/blockquote>\n\n\n\n

Because we weren’t able to eat it, we tried out a different recipe the next day. We made mini pound cakes<\/a> from Sally’sBakingAddiction.com<\/a>. We made half the recipe, and it made four mini cakes.<\/p>\n\n\n\n

The glaze recipe called for raspberries, but we didn’t have them so we used frozen strawberries instead. We also made the full recipe of the glaze, despite the fact that we halved the pound cake recipe.<\/p>\n\n\n\n

We also added less powdered sugar and more strawberries than the recipe called for, because it was tasting more like powdered sugar than anything else.<\/p>\n\n\n\n

They turned out really good, though we cooked them a little long. The almond extract was optional, but we were glad we put it in because it didn’t have a lot of flavor without it. We also didn’t have vanilla bean, which would probably enhance the flavor significantly. <\/p>\n\n\n\n

These cakes were very moist and flavorful and we would definitely make them again. We recommend that you make extra glaze and watch them closely in the oven, but this was a very good recipe that was easy to follow! <\/p>\n\n\n\n
